1/2 tsp. Mustard seeds

1/2 tsp. Cumin seeds

1/2 tsp. Hing or Asafoetida powder

1-2 Dried red chillies

6-7 Curry leaves

1 tsp. urad dal

1 tbsp. crushed ginger garlic

Masala mix

1/2 tsp. turmeric powder

2 tsp. Coriander powder

1 tsp. Normal red chilli powder

2 tsp. Kashmiri red chilli powder

1/2 tsp. black pepper powder

Salt (to taste)

Method
  • Peel three raw bananas and cut them in disk like shapes with a thickness of around half a centimeter

  • make sure to place the raw banana pieces in water while cutting to prevent them from browning due to oxidation

  • now drain the water and to this add half a teaspoon of turmeric powder, 2 teaspoons of coriander powder, 1 teaspoon of normal red chili powder, 2 teaspoons of kashmiri red chilli powder, half a teaspoon of black pepper powder and salt to taste

  • mix thoroughly

  • set a pan on medium heat and add three tablespoons of sesame oil. If you don't have sesame oil you can use either normal cooking oil or even coconut oil

  • add half a teaspoon of mustard seeds, half a teaspoon of cumin seeds, two dried red chilies, one teaspoon of black gram or urad dal, 10 to 12 curry leaves and some hing or asafoetida powder

  • stir fry for 10 to 15 seconds

  • once the seeds start to splutter add 1 tablespoon of ginger-garlic paste.

  • Saute these for around 30 seconds and then add in the raw banana pieces

  • mix the pieces well with the ginger garlic paste and the other spices and try to spread out the pieces as much as you can on your pan

  • sprinkle around 2 tablespoons of water and place the lid on let this cook on low heat for around 5 minutes

  • we want to make sure that the pieces haven't stuck to the bottom of the pan and we also want to check if the pieces are completely cooked through

  • If they don‘t look like they are cooked through yet, add a little more water and place the lid on once again

  • add salt to taste

  • sprinkle another tablespoon of sesame oil and fry the pieces till the masalas are nicely toasted and the plantain pieces have a beautiful coating

  • keep stir frying the pieces for around 10 to 15 minutes on medium heat till the pieces have a nice dark golden brown color

  • let's finish up with a squeeze of fresh lime juice for some extra kick

  • all done!
