Need some ideas for quick and exciting food! Here you go! 10 delicious vegetable quesadillas made with simple ingredients along with a zesty guacamole dip!


Method

Guacamole (Yield: 5-6 servings)

  • De-seed 2 avocados, cut them into small cubes and scoop them out in a bowl.

  • Add chopped onions (3 tbsp.), chopped tomatoes (2 tbsp.), crushed garlic (1 tsp.), salt (1 tsp.), black pepper powder (1/2 tsp.), fresh lime juice (2 tsp.) and mix well

  • Add chopped pickled jalapeños (1 tbsp.) or any other pepper if you like it hot


Quesadilla


For the quesadillas I used 10 inch flour tortillas and mixed shredded cheese. You can substitute with corn tortillas and any cheese of your choice.


I fried the quesadillas with butter three minutes on each side on medium heat. You can substitute with oil or mayonnaise if you like.


Serving Size: The quantities of the ingredients are enough for one 10 inch quesadilla


  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add 2 tablespoons of sliced onions and sauté until they are slightly translucent (for approximately two minutes)

  • Add 1/4 teaspoon of crushed garlic

  • Give it a quick stir

  • Add sliced mushroom (1/2 cup)

  • Add sliced bell pepper (1/4 cup)

  • Sprinkle some salt and pepper

  • Stir till the mushrooms are soft (for approximately three minutes)

Done!




  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add sliced onion (1/4 cup) and stir fry till they turn translucent (~1 minute)

  • Add crushed garlic (1/4 teaspoon) and sauté for one minute

  • Add corn (1/4 cup)

  • Add chopped tomatoes (2 tablespoons)

  • Add pre-boiled or canned black beans (1/2 cup)

  • Give it a quick stir

  • Sprinkle salt (to taste)

  • Sprinkle smoked paprika powder (to taste)

  • Add cumin powder (1/4 teaspoon)

  • Squeeze some lime juice

  • Mix well

Done!



  • Add 2 tablespoons of olive oil to a pan set on medium heat

  • Add chopped eggplant (one cup)

  • Sprinkle some black pepper powder

  • Stir fry until the eggplant pieces turn slightly crisp (~5 minutes)

  • Add 2 tablespoons of basil pesto to the fried eggplant

  • Mix well

Done!



  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add 1 tablespoon of chopped mint

  • Give it a quick stir

  • Add chopped tomatoes (1/2 cup)

  • Sprinkle salt and pepper (to taste)

  • Sauté for one minute

Done!


  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add crushed garlic (1/4 teaspoon) and sauté for 1 minute

  • Add 1/2 cup of Kale and stir fry for 30 seconds

  • Add 1/2 cup of pre-boiled or canned black beans

  • Give it a quick stir

  • Sprinkle some pepper

  • Squeeze lime (to taste)

  • Add 1 tablespoon of parmesan cheese powder

  • Mix well

Done!


  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add 1/2 cup of sliced onions and stir till they turn translucent (~2 minutes)

  • Add 1/4 teaspoon of crushed garlic and sauté for 1 minute

  • Add spinach leaves (1 cup)

  • Add sliced mushrooms (1/2 cup)

  • Stir fry for two minutes

  • Sprinkle some pepper

  • Add 1 tablespoon of parmesan cheese powder

  • Mix well

Done!


  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add 1/4 teaspoon of crushed garlic and sauté for 1 minute

  • Add chopped tomatoes (1/4 cup)

  • Sprinkle some salt and pepper

  • Mix well

  • Add chopped olives (1 tablespoon)

  • Add chopped pickled gherkins (1 tablespoon)

  • Add powdered dry oregano (1/4 teaspoon)

  • Mix well

Done!


  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add 1/2 cup of sliced onions and stir fry till the onions are translucent (~2 minutes)

  • Add 1/4 teaspoon of crushed garlic and sauté for one minute

  • Add 1/2 cup of pre-boiled garbanzo beans

  • Sprinkle salt (to taste)

  • Add 1/4 teaspoon of cumin powder

  • Add 1/4 teaspoon of red chili powder

  • Squeeze lime juice (to taste)

  • Stir fry for one minute

  • Mash the garbanzo beans partially

Done!


  • Add 2 tablespoons of butter to a pan set on medium heat

  • Add 1 cup of grated potato

  • Stir fry till soft (~5 minutes)

  • Add 1 cup of broccoli florets (cut in small pieces)

  • Stir fry till the broccoli soft (~3 minutes)

  • Sprinkle salt and pepper (to taste)

  • Mix well

  • Add 1/2 teaspoons of low sodium soy sauce

  • Stir fry for 1 minute

Done!




  • Add 1 tablespoon of butter to a pan set on medium heat

  • Add 1/4 cup corn

  • Sprinkle salt and pepper (to taste)

  • Give it a quick stir

  • Sprinkle red chili flakes (to taste)

  • Add 1 tablespoon of chopped cilantro and 1 tablespoon of chopped pickled jalapeños

  • Give it a stir
