Healthy and delicious vegetarian alternative to minced meat curry! Let’s make it together!


Ingredients

Yield: 5-6 servings


Soya granules... 2 cups

Onion (chopped)... 4 tbsp.

Garlic (crushed)... 1 tbsp.

Ginger (crushed)... 1 tbsp.

Fresh tomato purée... 1 cup (made from 2 small tomatoes)

Coriander leaves (chopped)... 1 tbsp.

Mint leaves (chopped)... 1 tbsp.

Cumin seeds... 1/4 tsp.

Cinnamon stick...1 inch

Turmeric powder...1/4 tsp.

Kashmiri red chilli powder...1/2 tsp.

Cumin powder... 1/2 tsp.

Coriander powder...1 tsp.

Garam masala powder...1/2 tsp.

Black pepper powder...1/2 tsp.

Fresh lime juice...3 tsp.

Ghee...1 tbsp.

Salt (to taste)



Method
  • Put the soya granules in a pot

  • Add enough warm water to cover it

  • Set a pot on medium heat and let the water come to a boil. Once the water starts boiling place the lid on and cook for one minute

  • Drain the water and press the water out on a strainer

  • Keep it aside

  • To the same pan add 2 tablespoons of oil and set on medium heat

  • Add cumin seeds and a cinnamon stick

  • Once the cumin seeds start to splutter

  • add onions and half a teaspoon of salt

  • Stir fry the onions till translucent (for approximately two minutes)

  • Add crushed garlic and ginger and stir fry till the mixture turn slightly darker (for approximately two minutes)

  • Add turmeric powder and mix well

  • Add fresh tomato purée mix well and place the lid on

  • Let this cook for approximately two minutes

  • Star fry the mixture till it gets thick and separates easily from the pen this (will take approximately three minutes)

  • Add cumin powder, coriander powder and give it a quick stir

  • Add Soya

  • Add half a tsp. of salt and mix well

  • Add ghee and stir fry for approximately three minutes

  • Add a cup of water, kashmiri red chili powder, black pepper powder, mint leaves and stir thoroughly

  • Placed the lid on and let it cook for five minutes

  • Add garam masala powder and mix thoroughly

  • Add salt if needed and add half the coriander leaves and stir fry for approximately five minutes

  • Garnish with the remaining coriander leaves
