Easy creamy Mango Phirni recipe/Mango Phirni/Mango pudding/Mango desserts/How to make mango phirni


A delicious mango rice pudding that you can make in less than 30 min! All you need is milk, rice, mango, nuts and sugar! Try it! It’s addictive!


Ingredients

Yield : 5 servings


Full fat milk...1 liter

Sugar...100g (1/2 cup) or to taste

Rice...50g or 4 tbsp.

Mango pulp...1 cup

Cardamom powder...1/2 tsp.

Finely chopped almonds+Cashew nuts+Pistachios...10-12 each


Method
  • You can use basmati rice or any other type of rice for this recipe.

  • Wash it well and soak it in 4 tablespoons of water for 30 minutes

  • The mango puree can be made from fresh mangoes or store-bought mango pulp is good too

  • Add the pre-soaked rice into a blender jar along with whatever water that's remaining in the bowl. Blend it briefly so the rice grains break up. It doesn't have to be a very fine paste, I can best describe it as a little coarser than semolina

  • Next will add the nuts into a grinder jar and grind this into a coarse powder

  • Set a pot on medium-high heat preferably a nonstick one and let the milk come up to a boil

  • Once the milk starts boiling add the rice that we just blended

  • We're going to keep boiling the milk until the rice is fully cooked

  • Keep in mind that you have to scrape the bottom of the pot as you stir the milk because of rice grains have a tendency to settle down and stick to the bottom of the pot and it would burn

  • Also scrape any cream that sticks on the walls of the pot and add them right back into the milk. After ~15 minutes the milk should look creamy and the rice should have cooked through

  • It's time to add in the sugar. You can add less or more depending on how sweet the mango puree is

  • Next add in the green cardamom powder and powdered mixed nuts

  • Sometimes the powder nuts tend to clump together so just take a whisk and break up the clumps

  • After ~25 minutes can you will be able to see little bubbles forming and the milk would have thickened nicely!

  • now it's time to off the heat and add in the mango puree and mix well

  • Garnish with some chopped pistachios and chill this in the fridge for 2 hours at least

  • Enjoy this with fresh mango pieces!
