Chilli Garlic Noodles/Street Style Chilli Garlic Vegetable Noodles/Chilli Garlic Hakka Noodles

Spicy Hot Garlicky and Smoky vegetable noodles that is guaranteed to awaken your taste buds!!


Ingredients

Yield: 3-4 servings


Hakka noodles… 360g (2 slabs)

Onions (thinly sliced)… 1/4 cup

Garlic (crushed)… 2 tablespoons

Carrot (thinly sliced)… 1/4 cup

Green French beans (thinly sliced)… 1/4 cup

Bell pepper (Capsicum) (thinly sliced)… 1/4 cup

Cabbage (shredded)… 1/4 cup

Spring onion greens (chopped)… 1/4 cup

Dry Red Chilies… 3-4

Black pepper powder… 1/2 teaspoon

Salt… to taste


Sauce Mix


White vinegar… 2 tablespoons

Soy sauce (low sodium)… 2 tablespoons or Soy sauce (high sodium)… 1 tablespoon

Red chili sauce… 2 tablespoons

Water… 1/4 cup

Corn starch… 1 teaspoon


Method:

Prepping the noodles

  • Add dry hakka noodles slabs to a pot of boiling water

  • Make sure that the noodles are totally submerged in the water

  • Boil till the noodles are approximately 90% done

  • This should take around three minutes (or follow the instructions by the manufacturer)

  • Drain the noodles, Pour around 2 tablespoons of oil and toss it thoroughly

  • This will prevent the noodles from sticking to each other. Keep it aside

Sauce mix for the noodles

  • In a bowl add 2 tablespoons of white vinegar, 2 tablespoons of low sodium soy sauce, 2 tablespoons of red chili sauce, 1/4 cup of water, 1 teaspoon of corn starch and mix it thoroughly. Keep it aside

  • Set a pan on high heat and add around 3 tablespoons of oil

  • Add onions and fry till they turn translucent

  • Add garlic and stir fry till the garlic browns slightly

  • Add carrots and stir for one minute

  • Add green beans and stir for one minute

  • Add bell pepper and cabbage and stir for 10 seconds

  • Add the sauce mix and stir for one minute You will see that the sauce thickens.

  • Add red chili flakes and black pepper powder

  • Add in the pre-boiled noodles little by little and stir well to ensure that the sauce thoroughly coats it

  • Stir fry on high heat for 3 to 5 minutes for a smoky flavor

  • Turn off the heat and add spring onion greens for garnish

  • Add more chilli flakes if you prefer it hot
